Pancake Appreciation Day

Last Sunday we had a Pancake Appreciation Day. Unintentionally. After dinner (or the next day) we realized we'd had pancakes for three meals. The meals:

Breakfast:
Stephie's homemade buttermilk pancakes. She didn't make banana pancakes this time, and for some reason I didn't complain. Probably because I was distracted by fluffiness.

Lunch:
One of our new favorite soups, coconut curry chicken soup. The pancakes were savory carrot ginger pancakes with scallions and a dipping sauce.

Dinner:
We had another new favorite recipe, carne asade tacos. The flank steak is cooked with a spice rub of dark cocoa, cinnimon, and ancho chili powder. Steph makes homemade tortillas, and we serve them with crack sauce and cabbage. The pancakes were another savory one. This time a corn and jalapeno pepper pancake with a sort of warm cilantro salsa on top.

This was a nice set of meals.

It's been awhile since I have been on your blog and you have had a lot going on! Stephanie-you seriously are incredible. I'm sure you were not thrilled that Kevin put some of this stuff up, but hey, moms never get enough credit anyway. That was such a nice letter and your arrangement was awesome! Hope to see you both at Mr. C's party in June!
